ABOUT US
Born in Bovino,
raised among the olive trees.
Drupa was founded in 2021 in Bovino, a small village located in the Daunian Mountains at 620 meters above sea level. The name is no coincidence: in botany, a drupe is the fruit of the olive tree—an exocarp, a fleshy mesocarp, and a lignified endocarp. Three layers, just like the three values of this project: agronomy, art, and sustainability.
The imperfect circle of the logo represents Italian olive growing: rich in exclusive potential, yet historically burdened by fragmentation. With Drupa, we aim to seek perfection in the supply chain, incentivizing its progress.
The message is in the less is more: the time has come to do justice to the utopian world of Italian olive growing.
FROM FIELD TO BOTTLE
Our process.
Early harvesting
The olives are harvested at an early stage of veraison, using mechanical aids and nets, to maximize polyphenols.
Milling < 24h
Milling takes place within 24 hours of harvesting, to ensure the highest organoleptic quality and product safety, using a latest-generation two-phase mill.
Pitting
Partially destoned to reduce triglyceride degradation and increase the presence of valuable minor components.
Packaging
Bottled in dark glass or Bag-in-Box to protect the oil from light and temperature. Shipped directly from the farm.
THE OLIVE GROVE
Conscious management,
respect for the soil.
Spontaneous grass cover remains throughout the year between the rows and beneath them, combating soil erosion without water competition. Following regional integrated production guidelines, the necessary nutrients are provided for the health of the olive grove.
As for harmful insects and other diseases, interventions are carried out only when strictly necessary, respecting biodiversity through monitoring techniques.
Harvesting takes place at an early stage of veraison to obtain a higher content of phenolic compounds, using nets and mechanical aids.
